I already have a back-catolog of video episodes on YouTube, Now I want to upload video episodes for Apple + HLS

Please complete these steps before you start using the new features:

Go to "Distribution > Video Hosting & Distribution" and connect to Apple video (RSS video is connected by default)
Make sure you are disconnected from YouTube before you proceed. This stops Transistor from uploading duplicate videos to YouTube (since your videos are already there).
For each episode, download the video from YouTube (or use your original file from Riverside, Descript, etc.) and upload it to Transistor using "Replace media file."
Once you've backfilled every episode, go back to "Distribution > Video" and reconnect YouTube so new episodes publish everywhere automatically.
